GRECO’S Saganaki

Ingredients
- 1/4" slice cheese (Kefalotyri or Keflograviera or Halloumi)
- Flour to coat
- Juice of one lemon
- 1 tbsp olive oil
- 2 tbsp ouzo (one for the chef)
Instructions
- Wet the cheese with either lemon juice or water.
- Dredge the wet cheese in flour. Suggestion: placing the flour in the fridge for 15 minutes will
allow for even coating and better hold. - Put olive oil in a heavy skillet and heat on medium to high setting.
- Place cheese in pan until edges are brown. Turn and add lemon juice. Cook until brown.
- Add ouzo and ignite. Alternatively, add ouzo and just allow it to caramelize.
