Ingredients

  • 1/4" slice cheese (Kefalotyri or Keflograviera or Halloumi)
  • Flour to coat
  • Juice of one lemon
  • 1 tbsp olive oil
  • 2 tbsp ouzo (one for the chef)
    Instructions
  1. Wet the cheese with either lemon juice or water.
  2. Dredge the wet cheese in flour. Suggestion: placing the flour in the fridge for 15 minutes will
    allow for even coating and better hold.
  3. Put olive oil in a heavy skillet and heat on medium to high setting.
  4. Place cheese in pan until edges are brown. Turn and add lemon juice. Cook until brown.
  5. Add ouzo and ignite. Alternatively, add ouzo and just allow it to caramelize.
