As whey is boiled down and reduced, it starts to caramelize and sweeten up. It also acquires a beautiful dark colour as they form it into these blocks of sweet cheese goodness. 

A unique cheese and a fun one to try. 

We've seen people melt it down for a delicious, sweet fondue for dipping fresh fruit.
