π§ Step-by-Step: How to Boil Fresh Lobster
Ingredients
-
1β2 fresh Nova Scotia lobsters
-
Water
-
Sea salt (about 2 tablespoons per quart of water)
-
Optional: lemon wedges, melted butter, herbs
Step 1 β Prepare the Pot
Fill a large pot about ΒΎ full with water.
Add sea saltβthis mimics the natural salinity of Atlantic seawater and enhances flavor.
Bring the water to a rolling boil.
Step 2 β Add the Lobster
Grasp the lobster firmly behind the claws and lower it into the boiling water head-first.
Cover immediately.
Cooking times:
-
1 lb lobster: 7β8 minutes
-
1.25 lb lobster: 8β9 minutes
-
1.5 lb lobster: 10β11 minutes
-
2 lb lobster: 13β14 minutes
Youβll know the lobster is done when the shell turns bright red and an antenna pulls out easily.
Step 3 β Cool the Lobster
Remove the lobster with tongs and transfer it to a bowl of cool water for 15β20 seconds.
This stops the cooking and keeps the meat tender.
Step 4 β Crack and Extract the Meat
Use lobster crackers or the back of a heavy knife.
Remove meat from:
-
Claws
-
Knuckles
-
Tail
-
Legs (you can roll them with a rolling pin!)
Save the shells for stock if desired.
